Is there a better summer cook out side dish than homemade mac and cheese? We think not! There are a hundred different ways to make mac and cheese but our latest and greatest favorite is with pimento! When you spice it up with a few peppers and onion it turns into a cheese baked casserole style dish that everyone will be drooling over!
Cook elbow macaroni according to directions and drain. Drain. (Optional: Cook 1-2 minutes longer to retain softness after baking)
In a saucepan, melt 1/4 cup of butter over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly to avoid burning. Stir in cheeses, and cook over low heat until cheese is melted and sauce is thick
Pour macaroni into large glass casserole dish and add sauce. Add onions and peppers. Stir well.
Melt 2 tbsp. of butter in a skillet over medium heat. Add breadcrumbs to brown. Then, spread over macaroni and cheese. Sprinkle paprika to taste.
Bake at 350 F. for 30 minutes and serve.
