A fast, flavorful meal that keeps the dirty dishes to a minimum – Try our fiesta cream skillet chicken! This tender chicken is cooked in a rich, creamy sauce with just a touch of spice. Serve with a side of veggies, or over pasta.
1Step One: Prepare Ingredients
Preheat oven to 375 degrees. Use a mallet to pound chicken breasts down to 1/2 inch thickness and sprinkle salt and pepper to taste on each side. At this time, you'll also want to prepare the rest of your ingredients, finely chopping yellow onions, jalapeños, garlic, and cilantro.
Then, combine chicken broth, lime juice, red pepper flakes, cumin, and minced garlic in a small bowl and set aside.
2Step Two: Cook Chicken
With 1 Tbsp. of olive oil heated in a large skillet over medium-high heat, add the chicken. Brown on both sides for approximately 2 to 3 minutes on each side. Remove the chicken to a plate and set aside for later. Don't worry if the chicken isn't thoroughly cooked, it will be cooked completely later.
3Step Three: Reduce Fiesta Cream Sauce
Reducing the flame to medium heat and using the same skillet, add the diced onions and mixture of chicken broth and seasonings. Let the sauce reduce for about 10-12 minutes until only 1/3 of a cup of the sauce remains. Then add the minced jalapeños and stir.
When the sauce is reduced, remove it from the flame to add the butter. Allow it to melt completely before adding heavy cream. Use a whisk to combine all of the ingredients thoroughly. Place the skillet back on the flames for only 30 seconds to prevent the sauce from boiling or curdling.
4Step Four: Bake Chicken and Sauce
After you remove the skillet from the stovetop, add the chicken back into the pan and bake the dish in the oven for 5-8 minutes or until the chicken is clearly cooked through. Remove the dish and let cool, but don't forget to sprinkles cilantro and squeeze a lime wedge over it for serving!
