These delicious, cheesy spinach bites have the perfect amount of health and indulgence. Serve them as appetizers or take them on the go for that extra boost!
First, the fresh spinach leaves must be trimmed and washed for cooking. Trim any extra stems and rinse through with cold water. Then set over boiling water in a mixing bowl to steam lightly. Rinse again, and squeeze out all remaining water. The six cups of dry spinach should now be close to 2/3 cups of cooked spinach. Next, finely chop cooked spinach and return to mixing bowl.
2Make Spinach Ball Mix
Add eggs, grated, Homestead Creamery gouda (or cheddar) cheese, garlic salt, parsley, and Panko bread crumbs to mixing bowl. Mix until you can easily form a ball with your hands or an ice cream scoop. Add bread crumbs or egg as needed to achieve the right consistency.
3Bake and Enjoy!
Place balls on a cookie tray, covered with parchment paper. Bake in an oven preheated to 350 F for 15- 20 minutes. Spinach balls should get a light golden crisp on the top. You can eat warm or keep them cool in the fridge for another time!
