1Prepare the strawberries
Mash 1 1/2 cups strawberries with a potato masher. Slice the remaining strawberries to desired thickness and mix all strawberries, mashed and sliced, in a medium bowl with sugar and lemon juice. Let rest for 1 hour.
2Prepare the biscuits
Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
Whisk together the flour, salt, baking powder, baking soda, and sugar. Work in the cold butter with a fork or a pastry cutter until the mixture is crumbly.
Whisk together the buttermilk, vanilla, and egg. Add all at once to dry ingredients and stir until the liquid is absorbed.
Turn dough out onto a lightly floured surface and knead it lightly, just until it holds together. Pat out until the dough is about 1/2" to 3/4" thick, cut into 2 1/2" to 3" circles, and place biscuits onto the prepared baking sheet.
Brush the top of each biscuit with milk and sprinkle with the course sugar, if desired.
Bake for 10-12 , minutes, until the tops are golden brown. Once removed from the oven, let cool for at least 15 minutes before serving.
3Prepare the whipped cream
Whip the cream and vanilla until soft peaks form. For best results, chill a metal bowl in the freezer for 5-10 minutes before whipping with cold cream!
Just before serving, split open the biscuits, spoon berries over bottom biscuit and a dollop of whipped cream. Top with top of biscuit, more strawberries, and more whipped cream!
